Let's face it; Black folks will never give up fried chicken...
Minky may be "The Joking Fitness Nurse"; BUT this diet is NOT a joke! This is a grass roots campaign to take back "our diets", how my nanas used to cook. It's about cooking with the right fats, that are nutrient dense, protect the liver, have anti-microbial properties, satisfy you and make you feel good about eating traditional black/southern-style comfort food ... pleasurable eating. It's NOT the bacon or the fat back. It's the vegetable oils and rancid fats you now cook with, the portions you eat and constant snacking because you are nutritonally starved and unsatisfied, the sugar, the sedentary lifestyle and the stress of worry. This all has led to weight gain, belly fat and now... "you have a little sugar".
How long can you eat boneless, skinless chicken breast and no fat/ low fat yogurt, milk and cheeses and egg-whites only breakfasts? Until you lose the weight? Definitely not forever. Your hair & skin are begging you to stop eating chemically low fat, processed soy and high aspartame foods.
God made the whole egg the right way. The way nature intended.Let it be.
I have fried chicken / fish / oysters once a week in a stable saturated fat.
My total cholesterol is 237... Hold on you statin junkies... BUT my HDL (healthy cholesterol) is 90mg/dl, LDL (lethal cholesterol) is 87mg/dl and my triglycerides are 122. I am at much less risk, if I cared about cholesterol, than the person with a total of 189 (wearing it like a badge of valor) and a HDL of 30.
Yes, vegetable oils lower cholesterol; but it's not cholesterol that is going to take you away from here!. It the inflammation caused by eating too many trans fats, (crap, low fat/no fat snacks) and too many omega 6's (rancid, oxidized vegetable oils that don't hold up under heat).
Stearic acid, the saturated fatty acid in beef, raises your LDL, but also raises your HDL!*
I cook fried chicken at home in a fat that I have to order on line because the public is so scared of saturated fats, that there is no demand to buy them, so the grocery stores don't carry this very healthy, stable fat, on their shelves. This fat doesn't turn rancid when heated, it protects your liver and when you do deep fry you should use it! It's called BEEF TALLOW!

How many times do ‘experts’ have to tell Black folks:

My answer is: As any many times as they want. What the 'experts' are telling you isn't working; because it's not natural. You're not dumb! You're just not listening. Your brain/body wants fat and salt and sugar. Give it the real deal. You'll eat less guaranteed. Make one change. Switch to real, unprocessed fats to cook with. Start with that. Your hair, nails and waistline will thank you.

One way you make it hard for your body lose weight is if you try to do things to your body that it's not physiologically used to doing naturally. For example:
I know that if you want to eat 5-6 'mini-low fat-low-calorie meals' a day, you'll look like other sedentary animals that graze...like a
This is actually a stress for your body. It's not natural.
Physiologically speaking...
Everytime you eat anything; you make insulin. Insulin is a fat-storing hormone.
Stop eating so often. Give your pancreas a rest already. One of my favorite endocrinologists once told me, "No snacking, you have to give the pancreas a rest." Too bad people wait until their pancreas is overworked and pooped out from constant insulin making and secretion to wake up.
Embrace hunger. Take pleasure in knowing you're about to enjoy a full-fat macro-nutrient meal. Wouldn't you rather have a full meal than a snack of crap?
If you must snack, use your body's natural snack (glycogen from the liver). In order to do this, your pancreas has to produce glucagon, the opposite of insulin, and is your fat-burning hormone. Your stomach has to be empty or close to empty.
(Eating this way also helps increase your sensitivity to leptin. Which is what you want)
Where do you think 8am, 12noon, 5pm comes from?
If you have to eat every 2.5 hours (and not training for the Olympics); then your metabolically UNFIT. You're not eating enough food, enough full fat, enough protein, limited carb during your meals. If you keep pumping out insulin you may eventually become insensitive to it and that ladies, IS type 2 diabetes. That's when "you have a little sugar".
Also eating like this supports leptin resistance. Which is what you don't want!
You need to eat in a way the increases your sensitivity to the hormone leptin which acts as a messenger to tell your primal brain about how much energy (fat) it has (in its gas tank) for survival. If you're leptin resistant; your gas gauge (leptin) is broken. Your primal brain gets the signal from leptin that you're tank is almost empty, even though you have 50 lbs. of excess fat on your body. You'll never be successful (long term) in your weightloss efforts if you are leptin resistant and stressed-out.

Here's how to start stop snacking:
Eat full traditional, satisfying fats. Not vegetable oils, and no-fat/low-fat foods. Remember we've been listening to the low-fat rhetoric for years and we're fatter and sicker than ever! Here's a sample
of the full fats/oils I enjoy:
coconut oil from Asian store in Asbury Park or
coconut oil from Walmart
(both virgin, not hydrogenated)
- SLOW DOWN. Enjoy your food.
- No eating after 7:30pm. Breathe.
- Ask yourself, "Where's the protein?", "Where's the omega 3's?", "Where's the live food?" at every meal.
- Ask yourself, "Can I eat like this for the rest of my life?"
- Ask yourself, "What's weighing me down?" (toxic 'so-called' friends, clutter, etc.)
- Ask yourself, "How is my body interpreting the stressors in my life?" (a belittling family member, bratty child, thinking about my weight and 'eating healthy' all the time, hate job, no respect, sickness, etc.)
- Exercise so your body wants to be thin to survive. (Fight & Flight is too simplistic)
- FIND YOUR PLEASURE (Study yourself, Love yourself, fully, sexually, choose to be happy and realize you deserve pleasure in your life...everyday.)
- Pleasure decreases stress; Less stress decreases inflammation. Inflammation will take you away from here long before a total cholesterol of 240 will.

It drives me a little crazy when I hear black folk say, "I don't have to sit in the sun, I have a 'natural tan'". No, what you have is a Vitamin D deficiency that can cause any of the following:

Every body needs sunlight and vitamin D Deficiency or insufficiency has been associated with:
- autoimmune disorders including multiple sclerosis and rheumatoid arthritis
- cancers of the colon, breast, skin and prostate
- depression, seasonal affective disorder (SAD)

- heart disease, hypertension, Syndrome X

Food Sources of Vitamin D
USDA databases compiled in the 1980s list the following foods as rich in vitamin D. The amounts given are for 100 grams or about 3 1/2 ounces. These figures demonstrate the difficulty in obtaining 4,000 IU vitamin D per day from ordinary foods in the American diet. Three servings of herring, oysters, catfish, mackerel or sardines plus generous amounts of butter, egg yolk, lard or bacon fat and 2 teaspoons cod liver oil (500 iu per teaspoon) yield about 4,000 IU vitamin D—a very rich diet indeed!

- I want to eat liver, eggs, butter, lard and tallow. Why? Because of above and because cholesterol is the precursor to good hormone production. And you need saturated fat for absorption of fat soluble vitamins (A,D,E,K).Doctors used to recommend liver, heavy cream, B 12 shots and alcohol. Political correctness is surely costing us our health. We've cut out the saturated fat villian and we're more unhealthy and fat than ever.

Full fat yogurt, of course:
- I avoid soy,vegetable oils, HFCS & MSG. Both are very processed and are the main contributors to inflammatory diseases like obesity, heart disease, diabetes, cancer, etc. When I do use fake sugar, in my coffee, here's the Xylitol and the main sweetener I use:

- I don't multi-task. I want to be focused... not do 10 things half-assed and can't remember what I did.
Multi-taskers=Scatter brains=stressed out
- I exercise hard; but short. Why? Because you have to exercise like a predator is chasing you to burn fat. I call it 'Predator Panting Cardio' (PPC). When you are stressed and you just 'take it' and don't move; your brain tells your body makes fat to protect you. Stop hating your body for protecting you. You have to change your brain's interpretation of the stress. PPC does this. (you need some stress; but daily chronic stress makes you fat-in most people).
- I drink one alcoholic drink a day. Why? 'Cause I can. No really, there are studies that show that 1 drink a day is far better than no alcohol at all. (Not saying more is better!!!)
- I think for myself. Why? 'Cause I'm NOT a sheeple! I don't follow what's necessarily popular or politically correct at the expense of my beliefs. 30% of you think like me; the other 70% care what other people think. Also I ask myself does this belief serve me and my values?
- By the way, did you ever notice that those people who agree with you are smart and those who disagree with you are stupid? I DON'T take that position. I try to stay
'In the learn' NOT 'In the know' ...remember I could be wrong. I could learn more.

- Food, real food, should be processed by your body; NOT the food manufacturers!
Why am I so passionate about this?
...When I've worked at health fairs out in various
communities, especially minority communities, I often hear, "I have a little sugar". My mother "had a little sugar" too. I'm not going to tell you all the details... in the end she died trying to live. I didn't think it was because she "had a little sugar". Her sugar was normal (under control), her A1c's were normal, she successfully completed cardiac rehab, religiously exercised 4-5 hours a week on a treadmill, visited the doctors and took her medications, she, like Tim Russert, the news man, died from inflammation, nutritional starvation and chronic low level stress. This went undetected by trained medical professionals because they weren't looking for it. They were looking at cholesterol, A1c, fasting blood sugar, blood pressure and weight; not the scarring going on inside her arteries from eating inflammatory foods. I don't blame the doctors, my mother's lifestyle is what caused her demise... but it still hurts knowing that it all could have been avoided. You can avoid it too and without guilt and fear.
